RED WINES

Intense, elegant and deeply rooted in the land: our reds tell the soul of the mountains through native and international grape varieties, grown in extreme conditions and aged with handcrafted care.

WHITE WINES

Fresh, vertical and mineral: our whites are born at altitude, where temperature excursions and glacial soils give pure aromas, vibrant acidity and surprising aromatic precision.

MATERIALS

From French oak barrels to terracotta amphorae, each container is carefully chosen to enhance the wine, allowing the terroir to express itself with elegance and authenticity in a unique aging.

Stainless Steel

Our entry-level wines are vinified in stainless steel tanks, an inert and neutral material that allows for controlled temperatures. This method enhances the varietal character of the grapes, preserving their freshness, aromatic precision, and clean flavor.

Barrique

In our cellar, some wines undergo part of their aging process in 225-liter French oak barriques—one of the most traditional vessels in modern winemaking. Barriques enable gentle and steady micro-oxygenation, contributing structure and complexity to the wine, while releasing noble tannins and the toasty, spicy notes typical of oak. Our use of barriques is always carefully calibrated to respect the original character of the grape variety and the expression of the terroir.

Large oak vats

Our 2,000-liter wooden vats are traditional vessels used for aging some of our more structured reds, such as Cornalin and Nebbiolo. Unlike barriques, vats have a lower surface-to-volume ratio, allowing for slower, more even maturation and a gentler exchange with oxygen.

Tonneaux

Alongside barriques, we also use 500-liter French oak tonneaux, which offer a balance between oxygenation and preservation of fruit. Their larger volume means less tannin and aroma release, making them ideal for longer aging or more delicate grape varieties. Tonneaux are often chosen to ensure freshness and precision without sacrificing structure.

Tava Amphorae

Some of our wines—such as Sopraquota 900—are aged in artisan-made terracotta amphorae crafted by TAVA in Trentino-Alto Adige. Created through a collaboration between ceramicists, oenologists, and wine producers, these amphorae are fired at high temperatures (1200–1260 °C), resulting in controlled porosity and high thermal inertia. This allows for micro-oxygenation similar to that of wood, without releasing tannins or unwanted aromas—preserving the purity of the grape and the authenticity of the terroir.

Tuscan Jar

Alongside amphorae, we also use the Orcio Toscano—a traditional terracotta vessel handcrafted by Manetti Gusmano & Figli in Impruneta, in the heart of Chianti Classico. Made using the ancient Based Work technique and clay rich in Galestro, these vessels offer natural porosity, thermal insulation, and antioxidant properties. Ideal for gentle micro-oxygenation and stable aging, the Orcio Toscano is a timeless vessel that perfectly embodies our pursuit of authenticity and quality.
